You Asked For It...

Hi Everybody...Today's post is for a couple of my friends that have requested one of my soup recipes...this soup is so yummy and my whole family loves it, especially Daughter #4....she likes it so much she asked for it for her birthday dinner!!!  :)

Chicken Meatball soup is one of those dishes that is hearty and warm but still on the light side.  Served with warm Italian bread...it's the perfect cozy evening meal!!!


Chicken Meatball Soup
For the meatballs:
1/4 cup bread crumbs
1/4 cup chopped parsley
2 large eggs, lightly beaten
1 Tblsp. milk
1 Tblsp. ketchup
3/4 cup grated romano cheese
1 large clove of garlic
1 tsp. salt
1 tsp. black pepper
1 lb. ground chicken
  
In a meduim bowl stir together the bread crumbs, parsely, eggs, milk, ketchup, romano cheese, salt and pepper. Add the chicken and gently combine all ingredients together.
Using a teaspoon for measurement, roll meat mixture into approx. 1 inch meatballs.
In a large skillet or pot, heat  1/4 olive oil over medium heat.  Working in batches, brown the meatballs in the hot oil, be sure not to overcrowd the pan. 
When all the meatballs have been browned, remove from pan and set aside. 
For the Soup:
4 cups chicken broth or stock
3 cups grape tomatoes. cut in half
1/2 cup parmesian cheese, grated
2 cups Baby spinach
In the same pan that the meatballs were cooked in add the grape tomatoes and saute just until tender.  Add the chicken stock to the tomatoes and bring to a boil.  Add meatballs to broth and tomatoes and simmer until the meatballs are cooked through and add baby spinach.
While soup continues to cook, bring a pot of salted water to a boil and cook the orrichiette pasta until tender.  Drain and add to soup.   Top with grated parmesian.
